In 2000, the town of Elliston declared itself “Root Cellar Capital of the World” to recognize iconic landmarks in the community. Built both above and below ground, root cellars were used to store root vegetables, preserves, salt meat and fish. In winter, vegetables were stocked and protected from freezing, while in the warmer months food was kept cool.
